I’m not sure about you, but it seems like holidays at my house are always full of hungry kids and grown ups waiting for the big meal. It can be difficult to keep everyone happy while all the rest of the cooking goes on. I know the temptation to put out a bowl of chips and call it a day, but I want to help you keep on track with our goal of eating to nourish our bodies. While chips are fun and have their place, a variety of more filling options will keep your guests happier for longer while your turkey or ham gets baked to perfection this Christmas.

One of my favorite ways to keep hungry guests from getting hangry is this roasted garlic and bruschetta. With fresh tomatoes, roasted garlic, and rich goat cheese, it is sure to please everyone in your home. It is a serve yourself style, so friends and family can add as little or as much of each ingredient as they want. Made with only whole and healthy ingredients, these little slices of heaven will keep your body healthy and your taste buds happy.

Ingredients

  • 2 garlic cloves, roasted
  • olive oil
  • salt & pepper
  • 2 red tomatoes, diced
  • 2 yellow tomatoes, diced
  • 4 tbsp chopped basil
  • 6 oz goat cheese
  • 6 tbsp pecans, minced
  • 12-15 slices sourdough bread

Instructions

  1. Peel skin off of garlic and slice top off. Place in a shallow pan and drizzle with olive oil, salt, and pepper. Covering foil and roast 35 minutes at 400.
  2. Mix tomatoes, 1 tbsp oil, basil, salt, and pepper in a small bowl and set aside.
  3. Coat goat cheese on all sides with pecans and place on baking pan with foil. Drizzle with olive oil and bake at 450 until warm.
  4. Drizzle each side of bread with oil, salt, and pepper. Place on a baking sheet and place in oven at 450, flipping once until both sides are brown.
  5. To serve, place garlic on one side of a platter, tomato mixture in a small cop on another side, and the cheese next to the bread.
